A New Culinary Player in Lisbon
When you think of fast food, what comes to mind? Hamburgers? Pizza? Sushi? None of these options satisfied Spanish friends Paolo Colombo, Lorenzo Redaelli, and Oriol Reull, who wanted to add one of the world's most popular dishes to the mix: pasta. Thus, Relleno was born—a "fast-pasta" brand that debuted in Madrid in 2024 and, after expanding to Barcelona, Valencia, and Malaga, arrived in Lisbon in early October. For now, it's only available for home delivery, but the founders dream of evolving from a dark kitchen to open-door restaurants.
Lisbon was our first international step and a fundamental milestone for Relleno, the founders told Time Out via email. We are expanding our presence in the city and plan to open more units in Portugal. Our model is based on small, efficient spaces that reflect our brand identity, so we plan to strengthen our physical presence in the city and continue expanding to other European capitals like London, Paris, and Berlin.
Paolo, Lorenzo, and Oriol had no prior culinary experience when they embarked on this adventure, but their backgrounds in technology and startups—where scalability, data, and efficiency were part of the DNA—proved invaluable. Today, they offer a menu focused on a single product but 100% customizable, allowing customers to mix fresh pastas and sauces ranging from the popular carbonara to less obvious combinations like lemon ravioli with pesto, burrata, and pistachio. We want each customer to experience pasta their way (...), but we also select recommendations that highlight our exclusive pairings. It's a balance between creativity and expertise: the freedom to explore, with the confidence that every option meets our standards exactly.
All of Relleno's ingredients come from Italy, but the brand's graphics and packaging steer clear of the clichés of traditional Italian restaurants. Our identity is modern, minimalist, and inspired by design and fashion, rather than the typical trattoria aesthetic, but without losing the coziness and flavor that make Italian food irresistible, they told Time Out.
Buon Appetito! (or ¡Buen Provecho!)
The menu starts with four mozzarellas in carrozza (€3.95) as appetizers—a type of breaded cheese sandwich. Possible fillings include: Cantabrian anchovy; mortadella, sweet mustard, and pistachio; prosciutto cotto (ham); or Calabrian 'nduja (a type of sausage).
Next up are the stars of the show: the pastas (€9.90), which can be based on mezze maniche (short pasta), bigoli (fresh long pasta, +€1.20), meat tortellini, or ravioli—options include ricotta and spinach, pumpkin (+€0.50), veal cheek (+€1), mushrooms (+€1), and ricotta and lemon (+€1).
After making the first decision, you choose the sauces—pomodoro (tomato), pesto, gorgonzola and walnuts (+€1), ragù alla bolognese (+€1.50), amatriciana (+€2), mushroom and truffle cream (+€3), pesto burrata pistachio (+€4.50), carbonara (+€3.50), or San Marzano stracciatella pesto pistachio (+€4.50). If you're indecisive or short on time, there are pre-composed suggestions available on delivery platforms.
And because simplicity seems to be the secret ingredient, there's only one dessert: tiramisu (€5.90) and nothing else.
